Kris, first peel (can also leave on) run thru food
processor to slice, have large pan of boiling water, add potato slices stirring
every minute or 2, bring back to boil for 3 minutes, immediately drain and put
in sink full of clod water, swish around with hand or large spoon so your
potatoes get cool. Drain well you want them as dry as possible, then put in
dehydrator in single layers. Dry till they are hard, will not bend. Then
package either in jars (this is what I do) or vac seal (they have kinda sharp
edges though). If you have ever bought the dry scalloped potato box mixes you
will know approximately how many to use when you cook with them.

When you go to make scalloped potatoes you just put in casserole with your
onion and any meat you like and spices , then you can take 1 can of mushroom
soup and 1 1/2 cans water or milk and our over the dry potatoes (should be
enough to cover by 1/2 inch - you can add more milk if not covered) or you can
make your own white sauce recipe. DELICIOUS!!
